Zorba’s Café uses high quality fresh ingredients and does not add preservatives or artificial flavors. Zorba’s authentic cuisine is created from scratch, using olive oil for cooking and peanut oil for frying. In dishes requiring butter, only USDA Grade AA -finest quality is used.

What does all that mean?

Fats and oils are either saturated or unsaturated.

Saturated fats are solid and come from animal sources. Margarine and vegetable shortening, (hydrogenated oils), are solid, too, because the vegetable oils they are made of have been transformed chemically, (w/hydrogen atoms), and the final product is saturated fat.
Many researchers believe that hydrogenated oils may be more damaging than regular saturated fats.

Unsaturated fats are liquid and come from plants. They are oils made of either mono-unsaturated or poly-unsaturated fats.

Mono-unsaturated fats are recommended by many doctors and researchers who claim that they help reduce levels of LDL (bad) cholesterol.
Both oils we use at Zorba’s Cafe, olive oil and peanut oil, are high in mono-unsaturated fats.

Poly-unsaturated fats are also recommended by many doctors and researchers as relatively healthy. Soybean, corn and sesame oils belong to this group. Our hommus is made with tahini, made from crushed sesame seeds. 

OLIVE OIL

Olive oil, this golden and flavorful oil used in Greece since ancient times, is available as extra virgin, virgin and plain or pure olive oil.
Extra virgin olive oil, the finest of all, usually with only 1% acidity, is the oil that is produced from the first pressing of the olives (cold pressed, a process free of chemicals).
Virgin olive oil, this too, a first pressed oil, usually has anly 1-3% acidity. Plain or pure olive oil is usually a combination of olive oils.
“Light” olive oil is not light in calories, but rather in color and fragrance because of very fine filtration process.

The color, fragrance and flavor of olive oil depend on the soil composition, the climate and the variety of the olives used.
